- 10 g levadura en polvo
- 150 g azúcar
- 20 g piel de limón (o unas gotitas de esencia de limón)
- 250 g calabaza limpia
- 3 huevos
- 20 gr canela en polvo
- 70 gr aceite de girasol o de oliva suave
- 1 pizca azúcar
- 100 gr pasas (opcional)
- 100 gr nueces (opcional)
- 50 gr coñac
Instructions to make to make Bizcocho de calabaza
- Precalentar el horno a 190°C.
- Si las vas a poner, macerar las pasas en el coñac (puedes hacerlo poniéndolo todo junto un minuto en el microondas a potencia máxima).
- Triturar el azúcar en el vaso a velocidad máxima para hacer azúcar glass, y añadir la piel de limón, triturando a velocidad máxima hasta que no se vea ningún trocito. Bajar todo con la espátula.
- Añadir la calabaza a trozos y triturar a velocidad 6 durante 30seg. Si queda algún trocito, triturar un poco más.
- Colocar la mariposa en las cuchillas, añadir los huevos y batirlos en frío, 6 minutos, velocidad 4 para que queden muy espumosos. Bajar con la espátula los restos de las paredes y la tapa.
- Retirar la mariposa, agregar la pizca de sal, la canela y el aceite y mezclarlos 10 segundos, velocidad 4. Volver a bajar los restos de las paredes y tapa. Añadir el brandy de la maceración (opcional) y mezclarlo solamente con la espátula.
- Agregar la harina y levadura, y mezclar 10seg a velocidad 4. Si no se mezcla bien, poner unos segundos más.
- Volcarlo en un molde (si no es antiadherente, untarlo antes con aceite y espolvorearlo con harina). Esparcir por encima las pasas y las nueces para que no se vayan al fondo durante el horneado, hundiendo ligeramente con la espátula las que se queden en la superficie.
- Hornear durante aproximadamente 35 minutos a 180° con calor arriba y abajo. Aunque esté dorado comprobar con una aguja pinchando en el centro.
